Ingredients:

1 ½ packages Active Dry Yeast
1 ⅛ cups Sugar
½ cup Vegetable Oil
5 Large Eggs
1 tbsp Salt
7 ⅛ cups Flour

Steps:

Preheat oven to 150

Dissolve yeast and sugar in 1 and 3/4 cup lukewarm water. Let bubble (~5 min)

Whisk oil into yeast and beat in 4 eggs, one at a time with remaining salt and sugar

Gradually mix in flour

Use dough hook or knead on floured surface until smooth. Clean and grease bowl, and return dough to bowl. Cover with plastic wrap, let rise for 1 hour in warm oven (150 degrees, turn oven off when rising dough is in oven)

Punch down dough. Cover and let rise again for 1/2 hour in warm place

Split dough into 2 loaves. Braid each half into 6 strands and tuck ends under

Beat remaining egg and brush onto loaves

(optional) Sprinkle on poppy seed or other topping as desired

Let rise in fridge for 1 hour. Preheat oven to 375

Brush loaves with egg wash again. Bake 35-40 minutes or until it looks like challah
