Stuffed Cabbage

Ingredients

3 lbs Chopped meat
2 Large green cabbages
1 Onion, chopped
¼ cup Uncooked rice OR Matzoh meal
1 Egg
1 tsp Salt
1 tsp Pepper
cup Water
16 oz Cranberry sauce
1 Can of tomato sauce
¾ cup Ketchup
1 tsp Lemon juice
1.50 Packets of sugar
1 cup Raisins

Directions

Bring cabbage heads to boil and let stand 5-10 min until cooked

Mix together chopped meat, onion, salt, pepper, egg, water, and matzoh meal or rice

Fill leaves with mixture

Bring cranberry sauce, tomato sauce, ketchup, lemon juice, and sugar to a boil

Add loaded cabbage and raisins

Cook over low flame 2-3 hours, until ready

Glazed Carrots

Ingredients

2 lbs Baby carrots, cut in half the long way
4 tbsp Butter
3 tbsp Honey
1 dash Orange juice
Salt/Pepper to taste

Directions

Preheat oven to 375

Melt butter

Combine all other ingredients

Put carrots on tray

Toss in everything

Roast for about 45 min, or until brown

Butternut Squash Soup

Butternut Squash Soup

Ingredients

3 lbs Cubed squash
2 tbsp Butter
1 Chopped onion
5 cups Chicken stock
1 Chopped green apple
Nutmeg
Salt/Pepper
Cinnamon

Directions

Melt butter in pot

Saute onion

Add stock and squash

Cook 15-20 min until squash is tender

Put into blender to puree

Return to pot, season, and stir

Vegetable Soup

Vegetable Soup

Ingredients

5 cups Water
2 cups Beef broth
6 oz Tomato paste
1 oz Can of whole tomatoes
2 Carrots, sliced
½ cup Chopped celery
½ cup Chopped onion
16 oz Can kidney beans
1 Zucchini, thinly sliced
1 cup Frozen peas
1 Clove of garlic, finely chopped
2 tbsp Vegetable oil
¾ tsp Basil
¼ tsp Oregano
¼ tsp Salt
tsp Black pepper
½ cup Elbow macaroni

Directions

Saute onion, celery, and garlic in oil until soft

Add all other ingredients except pasta and beans

Cover and simmer 25-40 minutes

Add pasta and simmer 15 more minutes

Stir in beans

Tuna Casserole

Ingredients

1 lb Pasta (ziti or elbow preferred)
3 Small cans of tuna
1 Can of cream of mushroom soup
Pepper to taste
3 dashes Cinnamon Flakes
¾ cup Milk
Separately, mix together:
1 tbsp Melted butter
¼ cup Bread crumbs

Directions

Preheat oven to 375

Cook and drain noodles

Put in casserole dish

Add seasoning, milk and mushroom soup to noodles and mix

Sprinkle bread crumb mixture on top

Bake about 20 min or until bubbly

Turkey Meatballs

Turkey Meatballs

Ingredients

1 l Ground turkey
½ cup Bread crumbs
2 tbsp Onion powder
2 tbsp Garlic powder
1 Egg

Directions

Preheat oven to 375

Combine all ingredients in big bowl and mix well

Roll palm sized meatballs

Place on greased tray, about 1 in apart

Bake 15-20 min, until brown

Pork Roast

Pork Roast

Ingredients

4 lbs Pork
2 Onions, sliced thin
4 Cloves of garlic
1 cup Chicken broth
1 tbsp Chilli powder
1 tbsp Salt
½ tsp Ground cumin
¼ tsp Cinnimon
2 cups BBQ Sauce (optional)

Directions

Place onion and garlic on bottom of slow cooker

Add broth

Mix seasoning and rub on pork

Cook 6-8 hours on high OR 8-10 hours on low

Remove pork and pour cumin mixture

Put solids back in slow cooker

Add BBQ sauce

Cucumber Salad

Ellen’s favorite holiday dish to bring!

Ingredients

3 Cucumbers
2 tsp Salt
½ cup Cider Vinegar
2 tbsp Cold Water
1 tsp Sugar
½ tsp Pepper
2 Scallions, sliced thin

Directions

Peel the cucumbers and slice very thin. Sprinkle with the salt and set aside for 20 minutes. Drain well.

Mix together the vinegar, water, sugar, and pepper. Add to the cucumber with the scallions. Mix well.

Chill for 2 hours before serving.

Kugel

Noodle Pudding

Ingredients

1 lb Wide egg noodle
1 Large jar chunky apple sauce
1 stick Melted butter
4 Eggs
½ cup Sugar
¾ cup Raisins
2 tsp Vanilla extract
Cinnamon to taste

Directions

Boil and cook noodles until firm

Mix all ingredients together

Place in greased pan

Sprinkle cinnamon on top

Bake @ 350 for 1 hour
