Minestrone Soup

 2 tbsp Olive Oil
 1 Small Onion, chopped
 2 Cloves of Garlic
 4 Carrots, peeled and thinly sliced
 1 64oz Can Low-Salt Chicken Broth
 1 28oz Can Italian Plum Tomatoes, drained and chopped
 1 10oz package Frozen Broccoli Florets
 1 10oz package Frozen Green Beens
 1 10oz package Frozen Whole Spinach
 1 19oz Can Cannellini Beans, drained and rinsed
 1 cup Uncooked Macaroni, any size
 ½ cup grated Parmesan Cheese (optional)

In a large saucepan, heat the olive oil. Add the onion and garlic. Sautee for 5 minutes

Add sliced carrots. Cover saucepan, and cook for 10 minutes

Add chicken broth, tomatoes, broccoli, and green beans. Simmer gently for 30 minutes

Add spinach, cannellini beans, and macaroni. Cook for 15-20 minutes. If soup gets too thick, add 1-2 cups water.

Serve with parmesan, if desired
